Easy Fluffy Homemade Waffles

This Homemade Waffle Recipe is the perfect way to enjoy a lazy weekend morning! Using just a handful of ingredients you likely have in the pantry, these waffles are delicious drizzled with melted butter and syrup with seasonal fruits!

Sundays are for sleeping in, drinking coffee at the kitchen table, and making a delicious breakfast from scratch! No need for a waffle mix when you have this recipe in your hand!

INGREDIENTS FOR MAKING WAFFLE:

This recipe is easy to make and uses everyday ingredients you most likely already have on hand in your pantry:

  • Flour – Regular flour is best for this recipe
  • Oil – You can use olive oil or melted butter or vegetable oil.
  • Baking powder – to make your waffles nice and fluffy.
  • Eggs – I like to use large, good quality eggs.
  • Sugar – Don’t leave this out.
  • Vanilla – Madagascar vanilla gives you the best flavor
  • Milk – You can use any milk.

HOW TO MAKE WAFFLES AT HOME?

This light, fluffy homemade waffle recipe is easy but only takes about 15 minutes of prep!

  • Preheat your waffle iron and spray with cooking spray or rub a little melted butter on.
  • Whisk together the dry ingredients – flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs with a mixer until light and fluffy and pale in color.
  • Add the oil, milk and vanilla to the egg mixture. Mix the egg mixture into the dry mixture and blend until just smooth.
  • Let the mixture sit for about 5 minutes before adding to the waffle iron.
  • Pour onto hot iron and cook until golden brown.
  • Serve topped with pure maple syrup and butter or your favorite fruit and whipped cream.

CAN YOU USE A PANCAKE RECIPE FOR WAFFLES?

Waffles are made of a richer batter than pancakes, with an additional egg and oil. In fact, most pancake mixes offer directions for creating waffles out of the mix if you decide to go that route!

HOW THICK SHOULD WAFFLE BATTER BE?

Leaving the lumps in will give you a fluffier and more tender waffle in the long run. A good mixture will have the consistency of pancake batter or honey—not so thick and clumpy that it’s clinging to your whisk or so runny that it’s essentially water.

HOW DO YOU MAKE WAFFLES CRISPY?

Pour the batter into a preheated waffle maker that has been sprayed with cooking spray and cook for about 3-4 minutes – check and see if they are done to your liking, if not cook a little longer. If the waffles don’t get crispy enough in your waffle iron, place them on a rack set on a baking sheet and bake in a 250F oven for another 5-10 minutes, until crisp.

HOW TO MAKE BUTTERMILK WAFFLES?

To make buttermilk waffles, reduce baking powder to 1 1/2 teaspoons and add 1/2 teaspoon baking soda. Replace milk with buttermilk.

CAN WE MAKE AHEAD THE WAFFLE BATTER?

Make the batter, cover, and refrigerate for up to 5 days. Lightly whisk the batter before using it in case any ingredients have separated.

SERVING SUGGESTIONS:

Waffles are incredibly versatile and accommodating to so many different toppings, here are some of my favorite toppings:

Sweet: strawberries and whipped cream, jams and jellies of all kinds, fruit compote, whipped strawberry butter, honey, cinnamon sugar, maple syrup, honey butter.
Savory: Sausage gravy, fried chicken (like the classic fried chicken & waffles dish), or toasted chopped pecans

To keep waffles warm while cooking batches, place waffles on a wire rack and set them inside of a baking sheet. Keep warm in a 175˚F oven. Avoid keeping in the warm oven for longer than 30 minutes so they don’t dry out.

STORAGE SUGGESTIONS:

Be sure to cook up all the batter, because waffles store well in the fridge or freezer, and are easy to revive in the microwave, toaster or oven for quick breakfasts or even snacks.

To Store: Cool completely before storing in freezer bags or containers. They will keep up to two weeks in the refrigerator, and up to four-six months in the freezer.
To Reheat: Just remove as many as you need and place straight into the toaster oven on the medium or light setting until heated through. They can burn easily, so keep an eye on them.

  • 2 large eggs room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup light olive oil or canola or vegetable oil
  • 1 3/4 cups milk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour 250 g
  • 1 tbsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Preheat your waffle iron and spray with cooking spray or rub a little melted butter on.
  • Whisk together the dry ingredients – flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs with a mixer until light and fluffy and pale in color.
  • Add the oil, milk and vanilla to the egg mixture. Mix the egg mixture into the dry mixture and blend until just smooth.

Notes

For extra fluffy waffles, the egg whites are beaten until stiff peaks form and folded into the batter. This step only takes a few minutes and makes a big difference.
