Easy Fluffy Homemade Waffles

This Homemade Waffle Recipe is the perfect way to enjoy a lazy weekend morning! Using just a handful of ingredients you likely have in the pantry, these waffles are delicious drizzled with melted butter and syrup with seasonal fruits!

Ingredients
  

  • 2 large eggs room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup light olive oil or canola or vegetable oil
  • 1 3/4 cups milk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour 250 g
  • 1 tbsp baking powder
  • 1/4 tsp salt

Instructions
 

  • Preheat your waffle iron and spray with cooking spray or rub a little melted butter on.
  • Whisk together the dry ingredients – flour, sugar, baking powder, and salt.
  • In another bowl, beat the eggs with a mixer until light and fluffy and pale in color.
  • Add the oil, milk and vanilla to the egg mixture. Mix the egg mixture into the dry mixture and blend until just smooth.
  • Let the mixture sit for about 5 minutes before adding to the waffle iron.
  • Pour onto hot iron and cook until golden brown.
  • Serve topped with pure maple syrup and butter or your favorite fruit and whipped cream.

Notes

For extra fluffy waffles, the egg whites are beaten until stiff peaks form and folded into the batter. This step only takes a few minutes and makes a big difference.
