This Banana Snack Cake is an easy to make, delicious, smaller-portion cake that is great to eat for breakfast, snack-time or dessert.

WHAT YOU’LL NEED FOR THIS RECIPE:

You’ll need:

  • Brown Butter
  • Brown sugar
  • Granulated white sugar
  • Eggs
  • Vanilla
  • Ripe bananas
  • Gluten Free Flour
  • Baking soda
  • Salt
  • Powdered Sugar

This is such a simple recipe, no funny ingredients, just your basic pantry staples. So if you have ripe bananas staring you in the face, you need to make this cake ASAP.

HOW TO MAKE BANANA SNACK CAKE AT HOME:

This easy banana cake recipe is so easy to make and is a regular staple in our house. It can even be enjoyed without the frosting!

  • Preheat oven to 350F. Line a 8×8 square cake pan with parchment paper.
  • Combine the flour, baking soda and salt in a small bowl and set aside.
  • In the bowl, add the browned butter, brown sugar, white sugar, and vanilla to the bowl and mix for 2 minutes.
  • Add the eggs one by one and mix to until fully incorporated. Then mix in the mashed ripe bananas.
  • Add the dry ingredients and mix to combine. Make sure to scrape down the sides to ensure everything is incorporated.
  • Pour the patter in a your prepared cake pan, smooth out the top with an off set knife.
  • Place in your preheated oven and bake for 45 minutes. If the middle still seems under baked, allow to bake for an additional 10 minutes or until a toothpick used to check the doneness comes out clean.
  • Remove the cake from the oven and allow to cool completely

TIPS FOR MAKING THIS BANANA BREAD SNACK CAKE:

  • You can bake this banana bread cake in either an 8×8 pan or a 9×9 pan. I’ve baked it in both and prefer the 9×9 size.
  • I like to place the pan in middle rack while it’s baking in the oven. This helps the bottom from getting too brown.
  • If you’re a fan of nuts, toss pecans or walnuts in or you could even add chocolate chips (YUM!).
  • I think this cake is best if you make it and let it sit for several hours or even wait and it eat it the next day.
  • If you want to live on the edge, cut it in half, spread some butter on the insides of each half and then put the top back on.
  • The riper the banana, the sweeter! So adjust the sugar as per your taste!

HOW TO MAKE BROWN BUTTER?

If you have never made brown butter before, I recommend doing this at a very low temperature and don’t rush it. Cut butter into small cubes and place in a saucepan over medium heat. Let the butter melt and then begin cooking. Stir frequently and watch the butter. Continue cooking and stirring until the butter starts to smell nutty and turns a medium amber color. Remove from the heat and transfer into the bowl (make sure to get all the brown bits) and allow to cool for 10-15 minutes before proceeding with the recipe.

CAN I MAKE THIS BANANA SNACK CAKE IN AVANCE?

Yes! It can be made 2-3 days in advance and stored in the refrigerator double wrapped in plastic wrap. Alternatively, you can keep it for up to 1 month in the refrigerator double wrapped tightly in plastic wrap and placed in a large freezer bag. With either option, make sure your cake has cooled completely.

Ingredients
  

  • 1/2 cup 113g brown butter or ghee
  • 100 g light brown sugar
  • 100 g granulated white sugar
  • 2 eggs at room temperature
  • 1 tsp vanilla
  • 3 ripe bananas 350g, peeled and mashed
  • 280 g Cup4Cup Multipurpose Gluten Free Flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • powdered sugar dusting (optional)

Notes

  1. This cake is the best within 5 days after baking. As mentioned above, the bananas will turn brown over time.
  2. I use Cup4Cup Multipurpose Flour in this recipe for Gluten Free Banana Snack Cake. This blend already contains xanthan gum. You can easily swap this out for your favorite gluten free flour blend. If you make your own blend, please add 2 teaspoon of xanthan gum to this recipe.
