Banana Fritters – Pazha Kachayam

Golden brown and completely delicious, Banana Fritters/Pazha Kachayam are the perfect way to satisfy a sweet tooth! Made with sweet, fruity bananas and flavored with cardamom, then fried to perfection, these fritters are yummy all the way to the last bite!

Banana Fritters

Yummy fluffy banana fritters made in under 30 minutes from start to finish. They are soft, fluffy, sweet but not overwhelmingly sweet (no added sugar!). AND the banana flavor in these fritters is ah-mazing. So good, you’ll want to have this for breakfast, snack time or dessert. The perfect way to use up overripe bananas!

INGREDIENTS FOR BANANA FRITTERS:

To make banana fritters, you only need a few ingredients:

  • Bananas – Be sure it is super ripe with a dark peel to get that proper flavor.
  • Flour – I used all purpose today to hold up while frying.
  • Sugar – White sugar and a little icing sugar as garnish.
  • Baking soda – To get all the volume and tenderness we’re looking for.
  • Cardamom powder – To add extra flavors
  • Oil – We need something neutral in flavor and that can hold up to frying, like vegetable or canola oil.

HOW TO MAKE BANANA FRITTERS?

  • Prepare the batter: In a large bowl, mash the bananas. Mix in other ingredients until smooth batter.
  • Fry those fritters: Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F. Drop batter by spoonful into hot oil, and cook, turning once, until browned, about 5 minutes.
  • Serve hot: Drain on paper towels and dust with confectioners’ sugar. Eat them up nice and warm.

TIPS FOR MAKING THE BEST BANANA FRITTERS

Pazha Kachayam
  • Do not add too much sugar. Adding too much sugar will brown the kachayam/fritters very fast in oil before the inside gets cooked.
  • Don’t fry too many at once! Overcrowding the oil will cause the temperature drop. Aim for 4-5 in one batch.
  • Be sure the oil is nice and hot at 375 F degrees, otherwise the fritters will soak up too much oil.
  • You could use a cookie scoop to easily drop the batter into the oil.
  • These fritters are best eaten warm but they could easily be reheated in the microwave. Reheat in the microwave for only about 30 seconds at a time. If you leave them too long in the microwave, they might turn rubbery.
  • This dish can only be frozen before being fried, so be sure to cook fresh. The batter will last up to 2 weeks in an airtight container

WHAT TO EAT WITH BANANA FRITTERS

Banana Fritters are so versatile. You could eat them with a lot of things. Serve with jam or chocolate sauce for a sweet option.

You could also sprinkle powdered sugar on them and eat!

Ingredients
  

  • 1 cup mashed bananas approx. 3 ripe medium size bananas
  • 3/4 cup all purpose flour
  • 1/4 cup fine rava
  • 2/3 cup fine sugar
  • 1/4 tsp cardamom powder
  • 1/4 tsp baking soda

Instructions
 

  • Mash the bananas in a bowl. Add in the flour, sugar, fine rava and cardamom powder to the bowl.
  • Mix the batter well. Add in a tablespoon of water and mix the batter. Do not add too much water as the batter will become watery after a couple of minutes due to the addition of sugar and bananas.
  • Add in the baking soda and mix well. Allow the batter to rest for 10 minutes.
  • Heat oil in a pan until medium hot. Add in small scoops of the batter to the oil when the oil is ready.
  • Keep turning the batter balls so the batter cooks evenly on both sides.
  • Deep fry until its golden. Remove and drain on paper towels.

Notes
