Easy Banana Snack Cake is the recipe you were looking for to use up those ripe bananas! I hate throwing out extra ripe bananas and am always looking for ways to use them in baking. This cake is one of our favorites!

Ingredients
  

  • 1/2 cup 113g brown butter or ghee
  • 100 g light brown sugar
  • 100 g granulated white sugar
  • 2 eggs at room temperature
  • 1 tsp vanilla
  • 3 ripe bananas 350g, peeled and mashed
  • 280 g Cup4Cup Multipurpose Gluten Free Flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • powdered sugar dusting (optional)

Notes

  1. This cake is the best within 5 days after baking. As mentioned above, the bananas will turn brown over time.
  2. I use Cup4Cup Multipurpose Flour in this recipe for Gluten Free Banana Snack Cake. This blend already contains xanthan gum. You can easily swap this out for your favorite gluten free flour blend. If you make your own blend, please add 2 teaspoon of xanthan gum to this recipe.
