Strawberry Shrikhand

Strawberry Shrikhand is a sweet dish made using hung curd, powdered sugar and fresh strawberries and is usually served with puri. It is basically an assortment of silky smooth curd and crunch of fruits!

Shrikhand is nothing more than smooth yogurt, strained until it loses all its whey, then sweetened, flavored and chilled to become delicious desserts. It’s served as dessert or side dish with poories.

It is very simple and easy dessert and today I prepared with a little twist as it is made with the combination of ripe and sweet strawberries and yogurt instead of the traditional saffron and yogurt combo.

Shrikhand Sweet is quite popular in Gujarat and Maharashtra as a dessert or a side dish which is savoured with joy along with Puri.

There are many different ingredients that you can add to this sweet and create a different flavor out of it.

I love to make Kesar Shrikhand as I can easily find the ingredients (Kesar and Elaichi) in my home throughout the year, so it gets easy to assemble this dessert.

You could even use seasonal fruits such as mango, chikoo, custard apple and make a fruit based Shrikhand.

Ingredients

  • 2 tbsp Milk Warm
  • 3 cups Yogurt
  • 1/2 cup Powdered sugar
  • 1 tsp Cardamom powder
  • 1/2 cup fresh strawberry puree

Instructions

  • Start with hanging 3 cup of yogurt in a muslin cloth for 2-3 mins to form a hung curd (chakka) and mixed with 1/2 cup of powdered sugar (you can adjust as per your taste), 1/2 cup of strawberry puree (You can even mash the strawberries and add to the yogurt mixture) and a tsp of cardamom powder.
  • Whip everything well using an electric beater until it’s smooth. Check the taste and add sugar if required.
  • And your Strawberry Shrikhand is ready.
  • It is best served when its chilled with a smattering of nuts and chopped strawberries.

Notes

  1. Try to use homemade fresh curd to make chakka. Store bought is usually sour and then your Shrikhand will not turn out good.
  2. After pouring the curd in muslin cloth, keep the bowl with the strainer in the refrigerator and let it hang inside the refrigerator. It will prevent the curd from turning sour.
  3. Don’t hurry up the process of removing the liquid from the curd. A good Shrikhand is thick and creamy and not watery.
  4. Only add powdered sugar to the shrikhand. If you add normal sugar, it will not dissolve properly and will come in your mouth. To powder the sugar, add it in a blender and blend until smooth.
