Kesar Paneer Peda

This Kesar Paneer Peda is a soft, fudgy, slightly chewy Indian sweet which is made using paneer, milk powder, flavored with saffron and ready in less than 30 minutes!

Festival season is approaching and having some pantry staples available that can be turned into a delicious sweet are sure lifesavers.

It is a great sweet to prepare for festivals like Diwali, Holi, or Rakshabandhan. If you are in the mood to make traditional Indian sweet but pressed for time, try this quick and easy Peda recipe. You are sure to love it!

WHAT IS PEDA?

Peda is a popular Indian sweet that is specially made during Ganesh Chaturthi, Diwali, or other Hindu festivals. This Indian dessert uses milk solids and has a soft, creamy taste and a tender texture.

It can be flavored with cardamom powder and saffron, which adds a delicious flavor in the Pedas.

HOW TO MAKE THIS KESAR PANEER PEDA?

Add the saffron to 1 tbsp of warm milk. Give a quick stir and keep aside.

Heat a heavy bottom pan, add the grated paneer, ghee, milk and milk powder. Mix and whisk till smooth on a low flame.

Stir in the milk with saffron. Mix well till there are no lumps on medium low heat. Stir intermittently.

Add sugar and mix well. As the mixture cooks it will thicken. Keep mixing till it turns into a doughy ball.

You want to get a consistency such that its easy to roll into a ball and retains its shape (test using a small dough ball). Allow the mixture to cool for 5-10 mins or until you can easily handle it.

Roughly divide the dough into 10-15 portions.

Apply some ghee to your hands and roll into a smooth ball. Press between palms to flatten it a bit.

Kesar Paneer Pedas are ready!! Garnish with chopped pistachios and enjoy!

HOW TO STORE THESE PEDA?

It stays good for 3-4 days in airtight container in the fridge. Make sure to store in single layer in the container. If you are stacking them on top of each other, then make sure to line a parchment paper between them to avoid sticking.

Ingredients
  

  • 1 cup paneer grated
  • 1 cup milk powder
  • 2 tbsp ghee clarified butter
  • 1/2 cup milk
  • 1/4 cup sugar
  • pinch of saffron
  • 1/4 cup pistachios for garnishing

Notes

  1. While making pedas, make sure not to leave them unattended even for a minute. Stir intermittently.
  2. You can also add 1 tsp kewra water or rose essence to enhance the aromatic flavor. Adjust the sweetness as per your taste
  3. Don’t overcook the mixture as it will harden make the shaping process difficult. It will also result in dense and dry pedas.
  4. Apply ghee on your palms before making peda. It will prevent the mixture from sticking to your palms.
  5. Try to shape pedas when the dough is little warm, this would help in shape them easily.
  6. You can also add 1 tsp kewra water or rose essence to enhance the aromatic flavor.
  7. Don’t overcook the mixture as it will harden make the shaping process difficult. It will also result in dense and dry pedas.
