Mini Blueberry Bundt Cakes

These Mini Blueberry Bundt Cakes are single-serving sweet treats loaded with fresh blueberries and it’s super easy to whip up,makes for a delicious side kick to your favorite cup of tea or coffee. These mini cake are dense, almost like a pound cake, but it’s super moist and irresistible. This is the perfect festive cake for one!

These mini cakes are small enough so that no one has to share! Its crazy moist,soft and delicious treat you can enjoy any time of year!

This cake would be so perfect for any festive, party, potluck, baby shower or wedding , but don’t wait for a special occasion to make it… it’s perfect for any day of the week!

Moist and flavorful blueberry cake is studded with fresh (or frozen) blueberries and is oh so flavourful!

Mini Blueberry Bundt cake Recipe:

INGREDIENTS:

1/4 cup butter, softened
1/2 cup brown sugar
1 large egg
1/2 cup whole milk
1/2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1-1/2 cups fresh or frozen blueberries

INSTRUCTIONS:

  1. Preheat the oven at 350C. And grease the mini bundt pan with butter and coat with flour.
  2. In a small bowl, mix butter and sugar,until it become smooth and creamy.
  3. Beat in the egg, milk and vanilla,whisk everything together until all are combined well.
  4. Combine the flour, baking powder and salt; stir into creamed mixture. Fold in the fresh blueberries.
  5. Pour into four mini bundt pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  6. You can top with your favourite glaze or frosting and enjoy!

NOTES:

  1. If using frozen blueberries, use without thawing to avoid discoloring the batter.
