Creamy Egg Gravy with Yogurt

A lip-smacking simple and easy Indian Style gravy of hard boiled eggs are cooked in spicy tomato-yogurt masala .It is a perfect egg curry for rice or chapati making a delicious combo for quick weeknight dinner or even weekend menu idea that come together in less than 30 minutes!

This gravy is easy to make and protein-rich, they are one of my most reliable ingredients in the pantry.

Eggs are so versatile – to the point that you can always make something out of them when you’re in a pinch.And it is my favorite thing which can be eaten anytime and can be used in any recipe be it snacks recipes or main course dishes.

Whenever you are out of idea of what to cook next or do not want to cook anything lavish, this quick and easy egg gravy with hard boiled eggs and spices will chase your taste bud. It is not only an easy recipes but also tastes incredibly flavorful.

This egg curry is quick to cook recipe that is so much blissful in taste. Here is how to make egg curry recipe at home.

Creamy Egg Masala with Yogurt Recipe

ingredients:

3 hard boiled eggs
1 tbsp cooking oil
1 tsp mustard seeds
1 tsp cumin seeds
2 green chillies, slitted
few curry leaves
1 medium sized onion,finely chopped
2 cup tomatoes,finely chopped
1 tsp ginger, grated
1 tsp garlic, minced
1 tbsp cilantro,roughly chopped
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp crushed black pepper
1/4 tsp turmeric powder
1/2 tsp cumin powder
1 cups plain yogurt
1/8 tsp salt to taste
Water,depends on gravy thickness

INSTRUCTIONS:

  1. Heat oil in a pan, once its hot add mustard and cumin seeds.Once its splutter add green chillies and curry leaves.
  2. Add the ginger,garlic and onion.Saute till it is lightly browned. You can add little salt to cook fast
  3. Add in the chopped tomatoes and cook till mashy and oil separates.
  4. Add all the spice powder and mix well.Cook till the raw smell goes off.
  5. Whisk the yogurt well and add the tomato masala. Cover and cook till oil oozes out.
  6. Make a slit on the boiled eggs and add to the gravy, so that masala can incorporates well into the eggs.
  7. Adjust the consistency of the gravy by adding water and check for salt.Cover and simmer for 10 mins on a medium flame.
  8. Finally add the fresh cilantro and turn off the stove.

Serve the egg curry with steamed rice or roti and enjoy!
