There’s nothing fancy about pudding, and that’s what makes it so dang loveable. This chocolate pudding is one of the most satisfying treats you can find. Smooth and rich, warm or cold, chocolate pudding just makes you feel happy. I don’t know what there is about it. It appeals to people of all ages.

After trying this Chocolate Pudding Dessert, you will most likely have a new favorite pudding recipe. This smooth and decadent chocolate pudding is made with just a handful of ingredients and topped with a chopped hazelnuts and chocolate shaving, making it a wonderfully sweet dessert.

WHAT ARE THE INGREDIENTS YOU’LL NEED?

If you’ve never made Homemade Pudding, you are in for treat. Not only does it taste way better than that junk in a cup/package/box, but it is also super simple. The ingredient list is fairly basic; you might even have all the ingredients on hand right now.

  • Milk: This recipe uses whole milk for a rich flavor and texture.
  • Cocoa Powder: It adds a deep chocolate flavor and color to the pudding.
  • Chocolate: Using dark chocolate instead of just cocoa powder gives the pudding a rich deep flavor. You can use milk chocolate, semisweet chocolate or bittersweet chocolate.
  • Sugar: Regular granulated sugar sweetens the pudding. Since it is cooked on the stove top the sugar dissolves right into the mixture.
  • Oat Flour: Oats helps in thickening the pudding. There are no eggs in this recipe, the oat flour alone acts as the thickening agent.
  • Butter: My favorite puddings are always finished with a tablespoon of butter. The butter gets whisked in at the end of cook time. The warm pudding melts the butter and creates a velvety texture all throughout the pudding.
  • Vanilla extract: A splash of good vanilla extract is also added at the end of cook time. The vanilla flavor won’t come through much, but the subtle vanilla undertone really rounds out the chocolate flavors.
  • Salt: A little salt cuts the sweetness giving a perfect balance.

HOW TO MAKE?

Homemade pudding recipes vary slightly, but this one is as easy as it gets.

In a pan, dry roast the oats for 2-3 minutes and grind to a smooth powder along with 2 tbsp roasted hazelnuts. Keep aside

In a sauce pan, add the milk, dark chocolate, cocoa powder, sugar and bring to boil on medium flame. Whisk constantly while it comes to a boil.

Then add the grounded oat and hazelnuts along with a pinch of salt on a low flame. stir continuously, until the pudding thickens (it takes approx 5-7 mins).

Finally add the butter and vanilla extract. Mix well until the butter melts and turn off the flame.

If there are any lumps in your pudding, straining it through a fine mesh sieve or it blend to a smooth pudding.

Once the pudding cools down, transfer it to serving bowl and refrigerate for 2 hours. Garnish with some chocolate shaving and chopped hazelnuts before serving.

  • Placing plastic wrap directly onto the surface of the pudding will prevent a skin from forming over the surface as it cools.

HOW TO SERVE CHOCOLATE HAZELNUT OATS PUDDING?

This pudding is absolutely delicious as-is; it doesn’t need anything else. But, if you want to add a little something extra, here are our favorite additions:

  • Sprinkle with crushed hazelnuts.
  • Top with whipped cream.
  • Dust with cocoa powder.
  • Sprinkle with chocolate shavings or chocolate sprinkles.
  • Garnish with fresh raspberries or strawberries.
