WHAT IS KEBAB?
Kebab or Kabab or Kabob is a small pieces of meat, fish, or vegetables roasted or grilled or broiled on a skewer or spit.
Kebab (kebap in Turkish, kabab in Iran, Afghanistan, India and Pakistan, also spelled kebob, kabob) means “grilled (or broiled) meat” in Persian and Turkish. [WIKI]
INGREDIENTS NEEDED TO MAKE THIS KEBABS:
To make these Hariyali chicken kabobs, you will need:
- Boneless skinless chicken cubes ( You can use chicken breast or thighs for this recipe)
- Oil ( I would to like use Mustard Oil or Olive oil)
- Thick Curd/ Yogurt
- Lemon Juice
- Ginger-Garlic Paste
- Cilantro
- Seasoning ( Red Chilli Powder, Cumin Powder, Garam Masala, Pepper Powder and Salt)
You will also need:
Skewers: Either reusable metal skewers or wooden skewers (be sure to soak those in water 30 minutes before using to prevent burning)
HOW DO YOU MAKE HARIYALI CHICKEN KABABS?
Just follow these simple steps:
- Marinade the chicken – The marinade is the most important part of this recipe since it brings the majority of the flavor to these chicken kababs. Whisk together your ingredients for the marinade then toss in your chicken and allow to soak for a minimum of an hour or overnight.
- Prep the oven and skewers – Preheat the oven to 450F. Thread the chicken evenly onto your skewers.
- Bake and Broil – Bake the chicken for about 30 minutes, turning once halfway through and baste with oil. Then broil on high heat for 3 mins or until the chicken is golden brown.
TIPS FOR THE BEST CHICKEN KEBABS:
- If using wooden skewers, make sure to soak them in cold water for at least 30 minutes – 1 hour before using so they don’t burn while cooking.
- I like to use chicken thighs for this recipe as they become tender when marinade with lemon. They are also super tasty. Feel free to replace with chicken breasts if you prefer.
- These Chicken Kebabs are delicious cold. We love serving them for a picnic!
- Don’t forget to baste the chicken kebabs once halfway through so they don’t dry out. This will also add extra flavor.
HOW LONG IS THE BEST TIME TO MARINATE CHICKEN?
If you marinate chicken for at least an hour, you will get a good taste of the flavors. However, the longer you leave it in the marinade, the stronger the flavors will become as they will soak into the chicken more.
HOW TO TENDERIZE MEAT?
Yogurt is a meat tenderizer, and the thick creamy consistency of greek yogurt will help bind and hold the spices together when grilled. You can also buy meat tenderizers from the market.
HOW TO MAKE GREEK YOGURT?
If greek yogurt is not available, then you can pour the plain yogurt in a muslin cloth and tie it up for few hours. Once the excess water drains you can transfer the thick yogurt into a bowl. Once you whisk it you will have greek yogurt.
HOW TO GRILL KEBABS IN THE OVEN?
I used a 3-inch deep roasting pan for placing the skewers and grilling. It helps the chicken to stay dry and not soak in its juices. Using an aluminum foil leaves no mess and makes clean up a breeze.
WHAT TO SERVE WITH CHICKEN KEBABS?
You can serves as follows:
- Serve as an appetizer with lime wedges, cucumber, cilantro and red onion. Serve with green chutney or yogurt sauce as a dip.
- Serve as chicken kebab bites by removing it from skewers and serve with green chutney or other dipping sauces as desired.
- Add it to your favourite salad by chopping these kebabs into smaller chunks.
- Roll it in wrap or pita with cucumber, onion, tomato along with green chutney and yogurt sauce for heart chicken kebab wrap.
- Add it to a curry for quick delicious chicken tikka masala in minutes.
- To make as wholesome meal, pair it with any pulao, briyani or flavored rice along with raita.

Tandoori Chicken Kebabs
Ingredients
- 1 lb chicken breast or thighs cut into 1 inch cubes
- 1 tbsp ginger garlic paste
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 cup thick yogurt
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala
- 2 tbsp oil
- 1 tbsp cilantro chopped
Instructions
- Pat dry the chicken well with a paper towel or kitchen towel.
- Mix all the ingredients with chicken. Cover and marinate for 4-8 hours.
- Soak bamboo skewers in water for at least 30 minutes before using or else the sticks can burn.
- Apply little oil on the skewer and thread the chicken pieces.
- Brush with oil and broil it for about 30 minutes, 12-15 minutes on each side. Brush some additional oil when you turn the sides in between.
- Serve with mint chutney or with mint yogurt dip.
For Mint-Yogurt Dip:
- Add half bunch of mint leaves and a clove of garlic to a food processor and grind to a smooth paste with about 2 tbsp of yogurt.
- Whisk a cup of yogurt, salt, chaat masala together. Add the grinded paste into whisked yogurt and mix well.
