One Pot Spaghetti

This One Pot Spaghetti a super simple recipe made with spaghetti, tomato sauce, basil, rich parmesan and a seasoned broth.

Ingredients
  

  • 4 Tbsp extra virgin olive oil divided
  • 1 cup yellow onion chopped
  • 3 cups chicken broth or more as needed
  • 1 28 oz can tomato sauce
  • 1 tbsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes optional for heat
  • Salt and freshly ground black pepper
  • 250 g thin spaghetti
  • 1/4 cup chopped fresh basil
  • 1 cup 2.2 oz finely shredded parmesan, divided

Instructions
 

  • Heat 2 Tbsp extra virgin olive oil in a 5 or 6 quart pot over medium heat. Add onion and saute 3 minutes. Add tomato sauce and saute 30 seconds longer.
  • Pour in broth, Italian seasoning, red pepper flakes and season with salt and pepper to taste.
  • Increase heat to medium-high and bring mixture to a simmer, stir in spaghetti.
  • Reduce heat to medium-low. Cover and simmer until spaghetti is nearly al dente, about 11 minutes, stirring once halfway through.
  • Let rest a few minutes off heat, add another splash of broth if needed.
  • Toss in 1/2 cup parmesan cheese and basil.
  • Drizzling servings with remaining 2 Tbsp extra virgin olive oil and sprinkle with remaining 1/2 cup parmesan.

Notes

  1. Check the level of liquid with spaghetti. If needed add more, every pot will allow steam to escape a little differently so amount may need to be adjusted slightly.
  2. Don’t skip tossing halfway through for even cooking.
  3. Cook to al dente for a perfect bite.
  4. Use good quality olive oil and finish with extra, it improves the overall flavor of the dish.
  5. Use good quality broth as it increase the flavor of the spaghetti.
