Mushroom Biryani
Mushroom Biryani is a flavorsome one pot briyani in which juicy mushroom are cooked in a lip-smacking masala along with long grain basmati rice and then cooked to perfection, this is very easy to make and come together in less than 30 minutes!

- 2 cup long grain basmati rice soaked for 30 minutes
- 2 tbsp cooking oil
- 2 tbsp ghee
- 2 bay leaves
- 4 cloves
- 2 green cardamon
- 1 inch cinnamon stick
- 1 tsp cumin seeds
- 1 yellow onion thinly sliced
- 4 green chilies slit into halves
- 1 tbsp ginger- garlic paste
- 2 tbsp coriander leaves finely chopped
- 2 tbsp mint finely chopped
- 1 medium-sized tomato thinly sliced
- 2 cup mushrooms thinly sliced
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chili powder
- 1/2 tsp garam masala
- 1 tsp briyani masala
- 3 tbsp hung curd
- salt as required
Wash and soak the basmati rice for 30 minutes.
Heat the oil and ghee in a heavy bottom pan, then add all whole spices and cumin seeds.Allow the spices to infused their flavors in oil.
Then add the green chillies, onion and ginger-garlic paste, saute until raw smell goes off and onion becomes soft and translucent.
Add half of the chopped cilantro and mint and saute for a minute.
Then add tomato, salt and all the spices powders. Saute for 2-3 minutes until the tomato becomes mushy.
Add the mushroom and mix well to coat with onion-tomato masala. Cover and cook for 2 minutes.
Then add hung curd, allow to cook until oil separates. Check and adjust the seasoning by this time if needed.
Add water to the mushroom masala and bring to boil.
Finally add the soaked rice and cook for 3- 4 minutes on high flame.Then reduce to low and cover with lid and cook for 5 minutes.
Mix well with fork or spoon and serve hot with Onion Tomato Raita or Boondi Raita.
- Always use top-quality long grain basmati rice for making any biryani, this makes fluffy and fragrant Biryani.
- Always rinse the rice and soak for 30 minutes before cooking which helps i softening the rice.
- Over cooking or under cooking of rice will spoil the briyani. Fluffiness of rice is very important for any biryani recipe, each and every grain should be separate and perfectly cooked. So make sure to use rice to water ratio 1: 1 3/4.
- Always use fresh ingredients like ginger, garlic, chillies, cilantro and mint. It makes the briyani much more flavorful.
