- 2 eggs
- 1/2 cup 75g vegetable oil or olive oil
- 1/3 cup 150g dates syrup
- 1/4 cup 50g milk
- 1 tsp vanilla extract
- 1 cup 250g ripe bananas, mashed
- 1 3/4 cup 210g whole wheat flour or plain all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup dark chocolate chips
- 1/4 cup chopped walnuts
Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
In a medium bowl, whisk the flour, baking soda and salt. Set aside.
In a large bowl, beat eggs, oil, dates syrup, milk and vanilla for 2 minutes.
Stir in the bananas, flour mixture, walnuts and chocolate chips.
Pour batter into greased pan, sprinkle with some more chocolate chips, walnuts, raw sugar, or banana slices.
Bake for 50-55 minutes or until a toothpick inserted comes out clean.
Allow to cool for 10 minutes, slice and enjoy!
