Doubles
Doubles are the most famous of Trinidad Street Snacks or sandwich where deliciously spiced fried bread called Bara, topped with a spicy chickpea curry!

- 16 oz Doubles Flat Bread Mix
- 1/2 cup cooking oil
- 1 tbsp oil
- 1 cup chickpeas cooked and drained
- 1 large onion finely chopped
- 1 tsp garlic minced
- 1 bouillon chicken cube
- 1 tsp cumin powder
- 1 tsp red chilli powder/smoked paprika
- 1 tsp white pepper
- 1/2 tsp nutmeg powder
- 1 cup broth or water
- 2 tbsp cilantro or parsley chopped
- Salt to taste
- Heat sauce optional
- Tamarind sauce optional
Mix the flat bread mix with 3/4 cup of water to a dough like consistency. Allow to rest for 20 minutes. Meanwhile make the chickpeas curry.
Heat up large sauce-pan with oil, and add onions, garlic. Stir occasionally for about 2-3 minutes until onions is translucent.
Then add in the spices and cook for a minute.
Add stock / water and bouillon chicken cube .
Next add chickpeas and bring to a boil. Let it simmer until sauce thickens, it might take about 15 minutes
Check for salt and pepper. Finally add some cilantro/parsley.
Roll the bara dough into small round using rolling pin. Fry the rolled bread in hot oil on both sides.
Serve these Bara with Chickpeas curry with chutney on top and enjoy!
