Baked Falafel Bowl

Falafel Bowls with Tahini sauce satisfy all there is to love about the Middle Eastern dish in a nutrient-rich bowl.

Ingredients
  

  • 10 baked falafel I have used frozen AFIA Foods Falafel
  • 1 cup mediterranean roasted cauliflower
  • 1 roasted red pepper
  • 1 cup cabbage mix
  • 1/4 cup cucumber sliced
  • 1/4 cup diced tomato
  • 1/4 cup diced red onion
  • 2 tbsp lemon juice
  • 1 pinch sea salt
  • 1/4 cup feta
  • 1 avocado
  • 1/4 cup tahini
  • 1/4 cup hummus

Instructions
 

  • Place the frozen falafel in preheated oven at 350 F for 20-30 minutes, flip once through the halfway.
  • Mix the red pepper with a tbsp of olive oil and salt, bake for 15 mins at 350F.
  • Mix the diced onion and tomatoes with lemon juice and salt.
  • To serve, place cabbage mix in a large bowl. Top with baked falafel, onion-tomato mixture, cucumber, roasted cauliflower, sliced avocado, roasted red pepper, feta and hummus. Drizzle with tahini and serve!
