Almond Flour Banana Bread

- 1 1/2 cup mashed bananas approx. 3 bananas (350 grams)
- 3 large eggs room temperature
- 1/3 cup granulated sugar (90 grams) or maple syrup (104 grams)
- 1 tbsp olive oil or butter
- 2 cup blanched almond flour (230 grams)
- 2 tsp baking powder (8 grams)
- 1/4 tsp salt
- 1/2 cup Add-ins ( chocolate chips, chopped walnuts)
Preheat the oven to 350F. Line a 9×5 loaf pan with parchment paper or grease with butter and set aside.
Add the bananas to a large mixing bowl and mash. Add the eggs, maple syrup, melted butter, and vanilla. Whisk to combine.
Stir in the almond flour, baking soda, baking powder, and salt just until fully combined.
Transfer mixture into prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
Remove from the oven and cool for 10 minutes then transfer to a cooling rack and allow to completely cool before slicing.
