Who doesn’t love frozen desserts? Thandai Kulfi is a creamy concoction that has delicate fragrance and taste of traditional thandai and it’s frozen!
WHAT IS KULFI ?
Kulfi is the desi version to western ice cream and gelatos but it is usually made be cooking milk for a very long time, until it has reduced until very thick, then sweetened, flavored and frozen until firm which makes it a perfect Indian dessert for parties. With Holi festival around the corner, I decided to make this Kulfi using the Thandai Masala.
As you all know thandai is a very rich and tasty drink made with milk, various nuts, poppy seeds and spices. Thandai is significantly prepared for holi festival and mahashivratri. I have already shared thandai recipe here so here comes an easy thandai flavored kulfi recipe this year.
Thandai Kulfi is almost similar to the Kesar Badam Kulfi with a slight twist. I have already shared Rose Flavoured Kulfi in my blog, do check out.

THANDAI KULFI:
Ingredients:
Thandai Masala:
1/4 cup almonds
1/4 cup cashew
1 tbsp fennel seeds
1 tbsp poppy seeds
1 tbsp dry rose petals
1 tsp peppercorns
5 green cardamom
Pinch of saffron strands
Kulfi:
3 cup full fat milk
1/2 cup sweetened condensed milk
1/4 cup organic sugar
4 tbsp thandai masala powder
2 tbsp chopped nuts
1 tbsp corn flour
DIRECTIONS:
THANDAI MASALA:
- Grind all the ingredients under thandai masala to smooth powder
KULFI:
1.Bring 1 3/4 cup of milk to boil and simmer for 15 mins.
2.Then add sugar, condensed milk and continue to stir for another 5 mins.
3.Then mix 1/4 cup milk with corn flour and make sure there is no lump
4.Add the corn flour slurry to the boiling milk and keep stirring on low heat.
5.After 5 mins add thandai masala and chopped nuts and simmer for 5 mins
6.Once it turns thick pouring consistency, switch off the stove and allow it to cool
7.Finally the pour it into a Kulfi mold and freeze overnight.
Serve with some extra chopped nuts and enjoy!
