Mutton Do Pyaza/Gosht Dopiaza

Looking for something hot,spicy and tasty Mutton gravy? Then here is the recipe of Mutton Do Pyaza (Gosht Dopiaza). It is a delicious Indian Style mutton gravy, loaded with lots of onions and melange of whole spices. One of the most popular mutton delicacies!

It is prepared with full of mouth watering spices and caramelized onions and a great pleasure for all mutton lovers!

“DO” means two and “PYAZA” means onion. Onions are the main ingredient in this mutton do pyaza recipe. It is added two times at different stage (actually a lot!). It is cooked with lot of aromatic whole spices and onions that are added to the gravy at two different stages(One at initial stages and second, carmelized onions at the end) giving it a rich and deep flavors.

A perfect mutton gravy you can cook during festivals, potlucks or parties. Relish this Mutton Do Pyaza with hot roti , naan or cooked rice for a hearty meal to enjoy with your loved ones.

Mutton Do Pyaza | Gosht Dopiaza recipe

Ingredients

Marination:
1/2 kg mutton
3 tbsp plain yogurt
1 tbsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chilli powder
1/2 tsp coriander powder
1 tsp salt
1 tbsp ghee/oil

Caramelized Onions:
1 cups yellow onions, thinly sliced
1 tbsp oil
1 tsp salt

For the gravy:

3 tbsp ghee/oil
1 inch cinnamon
2 cardamom
3 cloves
1/2 tsp peppercorns
3 cups yellow onions,thinly sliced
2 green chillies
2 dried red chilli
1 tbsp garlic, minced
1 tbsp ginger, grated
1 tsp fenugreek seeds ,roughly pounded
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
1 tsp garam masala
1/2 tsp sugar
Salt to taste
1 cup hot water
1 tbsp coriander leaves ,chopped (for garnishing)

Instructions

  1. Mix the mutton with all the ingredients mentioned under marination and keep aside.
  2. Let the mutton marinate for a hour, meanwhile lets make the carmelized onions. In a skillet, heat a tbsp of oil and fry 2 cups of onion with salt until is crispy and golden brown in colour.
  3. After a hour of marination,pressure cook the marinated mutton with 1 1/2 cups of water for 4-5 whistles.
  4. In heavy bottom pan,heat ghee or oil over medium heat and add the cinnamon ,cardamoms, cloves,peppercorns and dried red chillies
  5. Now add the sliced onions and sauté the onions until soft and golden brown in colour.
  6. Then add the garlic, ginger and slit green chillies. Fry for a minute.
  7. Now add pounded fenugreek seeds and continue frying for 3-4 minutes.
  8. Add in the cooked mutton without the stock and mix the mutton with the onion and cook till the mutton absorbs the flavor. Then add turmeric powder, red chilli powder and coriander powder.And cook on medium heat for 7-8 minutes.
  9. Now add the stock from the cooker to the pan and simmer for 15 mins.
  10. Add the carmelized crispy onions and mix everything well. Now cover and cook for for 10 to 15 minutes. The meat will be very soft almost will fall off the bones. Cook the meat until you get the desired consistency.
  11. Now add the garam masala powder and stir everything well.This dish is basically thick, dry and oil oozes from the sides.
  12. Finally turn off the heat and add chopped coriander leaves.
  13. Enjoy it with any indian bread or flavored rice.
