Mint Pulao | Pudina Rice

Mint Pulao/ Pudina Rice is a very simple yet delicious, refreshing and flavorsome one pot rice recipe that’s perfect for quick lunch or dinner!

Refreshing, zingy and delightful, a dash of mint can set almost anything right. We use it in our chutneys, raita, and even garnish our biryanis with the cooling herb.

TIPS FOR PERFECT MINT PULAO:

Here are the few tips and suggestions to make perfect mint pulao at home,

  • Use fresh mint and coriander to make the masala paste.
  • Soak the rice for 15 mins and then drain the water. Else the rice will becomes mussy.
  • You can also use sona masuri rice to make this pulao.
  • Do not overcook the masala paste otherwise it will turn dark in color.
  • Adding lemon juice helps in retaining green color of mint.
  • Always use rice to water ratio 1: 1 3/4 for perfect fluffy rice
  • You can also make this pulao by replacing water with thin coconut milk to enhance taste.

SOME OF THE VARIATIONS:

Here are some of the variations you can try:

  • Mint Corn Pulao – You can added 1/2 cup of frozen corn while the masala is simmering.
  • Mint Vegetable Pulao – You can use any vegetables of your choice to add in the pulao. Like potato, carrot, beans, cauliflower and peas
  • Mint Paneer Pulao – You can add paneer for extra protein.
  • Mint Chicken Pulao – ry adding some fried or grilled chicken
  • Mint Chickpeas Pulao – You can add 1/2 cup of boiled chickpeas while the masala is simmering.

HOW TO SERVE THIS MINT PULAO?

Serve this mint pulao with plain yogurt or raita like onion raita, onion-tomato raita, boondi raita.

Mint Pulao

Mint Pulao/ Pudina Rice is a very simple yet delicious, refreshing and flavorsome one pot rice recipe that’s perfect for quick lunch or dinner!

Ingredients
  

  • For mint masala paste:
  • 2 cup mint leaves tightly packed
  • 1/4 cup cilantro roughly chopped
  • 2 green chillies
  • 1/2 inch ginger
  • 3 garlic
  • 2 tbsp fresh coconut grated
  • Water as required for grinding
  • For pulao:
  • 1 cup basmati rice washed and soaked for 15 mins
  • 1 tbsp oil
  • 1 tbsp ghee
  • 2 cloves
  • 1 small cardamom
  • 1 inch cinnamon
  • 1 bay leaves
  • 1 tsp cumin seeds
  • 1 medium onion thinly sliced
  • 1/2 cup frozen corn
  • 1/2 tsp garam masala
  • 1 tbsp lemon juice
  • 1 3/4 cup water
  • salt as required

Instructions
 

  • In a blender, add mint leaves, coriander leaves, ginger, garlic, green chilies, coconut and grind to smooth paste by adding little water.
  • In a deep pan, heat oil + ghee and add cinnamon, bay leaves, cardamoms, cloves, cumin seeds and saute a minute till they become aromatic.
  • Then add sliced onions. Saute till the onions become golden and transparent.
  • Add the blended mint masala paste, garam masala and saute the masala paste for a minute or two.
  • Add the frozen corn and saute for a minute. Then add the lemon juice, salt and water, bring to boil.
  • Finally check for seasoning and add rice, mix gently.
  • Cook on medium flame till the water is absorbed to 80%. Then reduce to low flame and cook for 3 mins by covering it with lid.
  • Turn off the flame and let it sit for 3 more mins and open the lid and gently fluff the rice.
  • Serve pudina rice hot with plain curd or with boondi raita.

Notes
